Fun Friday

















My first attempt at marshmallows.  They are delish!
I have to admit I blew one up trying to make s'mores.


Today I did anything I could think of just to avoid work.  I talked to someone who's at a trainer level and that helped, but I still just don't like it.  It's not really a huge part of my job so I'm going to do the bare minimum until I get to go back to doing what I do best; look at storm damage and climb roofs.

So in part of taking my own advice, today I made marshmallows, pizza tot hotdish, did my taxes, and got in a workout!  I feel super productive and can be a slacker the rest of the weekend!  That's a good thing since I have lots of kiddo time.  The only things on my to do list are get some fabric squares for BooBoo, she's in LOVE with pulling tissues out of a box and swatch some new nail polishes.  I may have bought 5 new ones yesterday.

I wish I had taken a photo of my hotdish I made tonight.  It was so super yummy!

Pizza Tot Hotdish
Serves 3
made in a 6x9 pan (I think, it's a small rectangle)
oven at 425 for 25 min

2 italian sausage links (I had pork, but would use turkey next time)
1 package sliced mushrooms
2 c tomato sauce (I used some leftovers from meatballs earlier this week, next time it'll be from a jar)
4 TBSP sliced green olives
1 c mozzarella cheese
1/2 bag tater tots, crispy crowns would work well too

Take sausage out of casing and brown it up like you would hamburger
At about half way done, add in the mushrooms and cook'em to your liking.
Add in the sauce and let it warm up
Place it in the bottom of your pan (spray with some kind of cooking spray)
then layer in pizza toppings.  I wanted to add pepperoni but didn't have any, so I just used olives.
Top with cheese
Finally add on your tots.   I used Alexia brand ones, they were fantastic as they are slightly seasoned.
